Persian Restaurant in Washington
About the Restaurant
Founded in March of 1993 by brothers Shahriar and Shahram Gilandoost, Caspian Restaurant brought the flavors and heritage of Persian cuisine to the Seattle area with a clear mission: to introduce the richness of Persian culture; its art, poetry, and culinary traditions to the Pacific Northwest. After nearly two decades of acclaim in Seattle, Caspian moved to Bellevue in April 2011, continuing its legacy as one of Washington’s premier Persian restaurants.
Caspian’s culinary philosophy draws inspiration from ancient Persian trade routes, combining traditional recipes with ingredients and spices that reflect the cultural intersections between Persia, the Middle East, and Europe. All dishes are prepared fresh with no preservatives, using high-quality ingredients such as basmati rice, premium cuts of meat, fresh herbs, nuts, and spices like saffron, turmeric, cardamom, cloves, and cinnamon.
Signature Dishes
- Kababs: Skewers of beef, lamb, chicken, or ground beef served with saffron rice.
- Gormeh Sabzi: A classic Persian herb stew with beef, kidney beans, and dried lime served over rice.
- Fesenjan: Chicken cooked in a rich sauce of ground walnuts and pomegranate molasses.
- Appetizers: Roasted eggplant dip, herb-seasoned yogurt, and homemade hummus.
